Within each brand, the different colours of tag or tape represent different sell by dates, so the staff can quickly remove all the bread that’s going out of date without reading the labels.
This means that if you’re looking to see if there’s any fresher bread, you can check for different coloured tags.

around here, they still primarily use these clips, just often cardboard now. which is nice to see.
‘real’ bread that doesn’t have enough preservatives to keep it for weeks and is made fresh is typically sold in a paper/plastic bag with a sticker closing it, or just an open end
UK here, our bread bags are sealed with a piece of tape. It can’t be used to reseal the bag, but there’s enough excess length on the bags that you can just tie them in a knot to reseal them
Usually sliced bread is sealed with a bit of tape that has the best before date printed on it. Although it still only keeps for days rather than weeks, at a push you can probably get about a week before mould starts growing on it. Then real bread will probably start going stale by the next day.

Did they get rid of them somewhere? Those were on the hamburger buns I opened last. Maybe a state like California banned plastic ties holding together plastic bags?
Also apparently they got named by a parody site years ago and have a cool following of collectors. They call them Occlupanids. And apparently the colors are supposed to tell the day of the week the bread was baked on… ended up in a rabbit hole
Don’t really see them in the UK any more. They tend to use a reusable sticker instead.

Can’t say whether another state banned them, but they’re still on almost all my bread products in northern California.
They might be making them out of a plant-based plastic these days, so that they seem like traditional plastic but are actually biodegradable.
Honestly I wouldn’t miss the little plastic garbage that ends up polluting the environment
My local supermarket has been using cardboard ones for a few years now.

“Bread” used to be a slang term (at least in the USA) for money, so yeah - most commonly “bread” IS digital now.
It’s only “bread” if it’s made on the bread region of france, elsewhere It’s technically sparkling wheat brick.

I prefer these to the twisty ties. I always save them from bags that use them so I can put them on other bags that don’t.
The only thing better are those clamp style paper clips.
I’m more of a spin it around and fold under guy, myself.
