German bread, while better than french bread, is still not as good as polish or Baltic bread. Or Finnish for that matter. But generally the good bread is found in potato Europe. Tomato Europe takes wheat (the most boring grain) removes anything interesting from it and bakes it into something flavourless. Although I will give Italy credit for focaccia.
The best bread is not from France. It’s from eastern Europe especially the Baltic countries.

My mother used to make it and call it “Lvov bread” took me a while to work out that it is in fact not Ukrainian but Latvian.
But yes the fermented stuff is also delicious.
