Hah, I was thinking about this as I typed out my comment. People in Starfleet always seem to complain that replicated food doesn’t taste very good so my head canon is that it’s all basically weight watchers recipes. Supposedly even replicated ice cream has balanced nutrients in it.
It builds out Vic’s character, gave him a sense of control over his destiny, and established his credentials as a counselor. Nog is the focus, but Vic is the vehicle through which the episode is driven.
