So I had to wiki them. I’m from Louisiana, have you ever had beignets?
Wiki says there’s a version known as beignets rapides, as well as croustillons and croustillons hollandais.
Beignets aren’t ever filled, at least none that I’ve ever had, but they are covered with powder sugar like a snow drift. Nothing like a fried dough sugar rush to get you going.
Now I want to make some with fruit filling. Thanks!
We stayed at a place around the corner from Loretta’s. Those beignets were so good. Our table basically looked like Tony Montana’s desk after breakfast.
