You peel the bananas before putting them in the zip-lock bag.
When you have 5 or 6 bananas, you take them out and let them thaw in a bowl.
A lot of juice runs off in the bowl and this lets you cram even more banana in the banana bread than otherwise possible. That is, without making the banana bread soggy/claggy.
Now for the absolute kicker: Take the juice that has collected in the bowl, pour it in a saucepan with some extra sugar, maybe a bit of vanilla and give it some heat. Let it slowly evaporate until you have a somewhat thick banana syrup, which you will pour over your banana bread, once it has emerged from the oven.
