As a lactose intolerant person, my solution is peanut butter. Just fucking full spoons of the stuff. Probably not for everyone, and is a bit high in fat and low on carbs in extremis, but it’s decently balanced all things considered and requires very little effort while remaining quite cost-effective.
Certainly not mutually exclusive. As a man in his 20s who is both lazy and bad at cooking, rice, beans, and peanut butter could comfortably be called the Triumvirate of my diet lol.

It’s cheap af and fairly well balanced. Don’t do this if you’re lactose intolerant, though.
Dilute yogurt in water to get homemade lactose-less milk.
Fucking love yoghurt drink especially when it’s a bit tangy add a spoon of vinegar and you are set, chef’s kiss 😘
