Even if more functions were automated, two pilots means that neither will cave under pressure because you’ve got a buddy by your side who is doing all they can to get the plane safely back to land.
It can still happen, but is much less likely.
I would agree to “only one pilot” in such cases where this is the only human being on the plane.

That case single handedly destroyed any chance of mental health care for pilots. Rest easy that if your pilot has issues, they have literally no way of gettting help without losing their career.
