Imagine having a replicator and still choosing to spend hours gluing tiny plastic bits together. Some things just hit different when you make 'em yourself, I guess. And thank god for that.

I was always jealous of the clock Sisko makes

Picard was a helmsman.
Iirc, he was the project manager. The real engineers probably let him fool with interior lighting to keep him happy and away from critical systems….
They weren’t entirely successful.
He might have been an engineer unlucky enough to be promoted to project manager
When you replicate a model, the layer lines are a style choice. The most appreciated replicated Benchys are the “authentic” ones that still have hull lines and VFAs.
You can tell the real fans because they also replicate the sprues, just for the aesthetic.
